May is the The European Diversity Month, which is why we want to encourage you to explore other cultures also culinarily. Members of Baza are people with refugee, war, immigrant experience from all over the world. During the meeting they will talk about multicultural cuisine and prepare dishes with interesting stories behind them.
In an open and relaxed atmosphere, you will have the opportunity to listen to the story of Omaid Khan – a refugee from Afghanistan who found his passion for cooking in Poland. Together with Krzysztof Górniak, the chef of Baza, they will talk about the dishes they prepare.
The vegan menu presented by Baza will be a mixture of Jewish and Middle Eastern cuisines, also with Indian influences, full of aromatic spices that we are not familiar with on a daily basis.
During the meeting you will taste the following dishes:
- Plow (pilaf) – the traditional one-pot dish. Rice with (vege)meat, vegetables and aromatic spices. Present in Middle Eastern, Persian, Jewish and even under the name biryani in Indian cuisine.
- Hummus – a dish well known to many, but which can still be rediscovered in the most delicious versions. It is based on two ingredients: chickpeas and sesame. Within a few hours, thanks to homemade tahina made from sesame seeds, the right proportions and additives, the dish is transformed into something extraordinary.
- Chole – a salad based on potatoes and chickpeas. With a dressing made from fresh vegetables, the salad is given a multi-storey flavour.
Herbal infusions will also be available all evening.
Performing:
Omaid Khan – refugee from Afghanistan evacuated by the Polish armed forces. A chemistry and biology teacher who has always enjoyed cooking. He has found himself in Poland, as a chef who not only prepares, but also co-creates menus and invents new dishes.
Krzysztof Górniak – chef, social entrepreneur. He believes that the best flavours can be discovered in millions of home recipes. The arrival in Poland of people from new cultural backgrounds offers a great opportunity to broaden one's own taste horizons. Working with refugees gives great satisfaction in making things both good and tasty at the same time.
The mission of the Baza Association by Inclusive.Buzz is to build an inclusive, open, responsible society. It achieves it through educational activities, aimed primarily at the young generation, and by running Baza – a gastronomic-activist-cultural place in the centre of Warsaw with a vegetarian and vegan bistro where anyone can come.
The association employs people with refugee, war and immigrant experience from all over the world. It helps them find a roof over their heads, obtain refugee status, provide medical care and also psychological care. It gives jobs and training. Organises and supports the organisation of numerous workshops and meetings of groups from the climate, equality, LGBTQ+, humanitarian/refugee, animalistic communities. She collaborates with organisations such as: Chlebem i solą, Polskie Forum Migracyjne, Podróżnych Ugościć, Grupa Granica, Queerowa Akademia Ruchu, Kuchnia Konfliktu.
