Hi to everybody. Today, we're continuing with our cooking class, the same ingredients as we started last time with the chopped liver. This time we are doing Jerusalem Mix with two of the main ingredients. Its main ingredients are the livers, of course, and the onion. But the onion this time is not chopped, but cut in slices. And the Jerusalem mix is actually a mix of liver, chicken hearts and chicken breast cut in pieces. Chicken hearts cut in half when you see there some kind of spices. This is cumin. Cumin here is called sometimes, kmin rzymski. So this is the idea: and we are starting to fry the onions with little bit of chili. But that's the idea we fry the onions with the chili. And then we take out the onions and we fry the other ingredients, which means the chicken breast, chicken hearts and chicken livers in that in that sequence because each one of them has a different time of cooking. So we'll start later with the chicken breast, chicken parts and chicken livers. But we will speak about it a little bit later. As you see we started with the onions. So a little bit of frying of the onions... with the chili. As you probably see, our onions are actually done, we don't have to burn them. It's a little bit just because the anyhow, they will go in back into the our dish, but a little bit later. So what we're doing now is adding a little bit of oil - in order that we start to make the meat, first of all, the chicken breast. As I said, they are... cooking fast, but the slowest from all the three meats that we have. So will first of all, go with that chicken breast? As I remind you, everything was seasoned with cumin or kmin. We do not put salt yet and we will add now a little bit of pepper just to to make it a spicier. But anyhow... As you see.. I didn't want it too be too hot and I will just put the power up later because they have to be cooked, but not burnt. Now chicken breasts' got very nice color. There you see, they're already cooked, but not burnt. And I'm adding the other chicken parts in this, and again: the chicken hearts and the chicken breast should not be overcooked. They just have to be fried not to be raw. That's it. And now we will wait a little bit until this point is also ready. Now, as you can see, the chicken hearts' also changed the color. So they they're practically ready. And now is the time for the chicken livers to add to this. We should remember that the chicken livers are very delicate and they will be ready in a very short time. We should remember also that the colors' changed because we had we added to them a little bit of cumin, kmin and if we can do it for an hour, it would be even better. So you can see they they do have a little bit of moisture inside. We will wait until everything is cooked and the moisture is out. We see that all of our ingredients, which means the chicken hearts, the chicken breast, and the chicken livers are almost done. This is a good time to bring back the onions and to mix them with the Jerusalem Mix. So that's why it's called "Mix". Now to tell the truth: in Israel they are not using chicken breasts. This is my invention. Normally in Israel they use the chicken kidneys. But it's for those who love this special taste of kidneys. As I prefer the breast - so I'm doing the same with the breast. It's OK. The chicken kidneys- if you do it with the chicken kidneys - you put them together with the chicken hearts but before the livers, because they are more or less more the same consistency as chicken parts. So this is the idea we have. This is a good time also to add salt. I'm using the himalayan salt and grinded pepper. Now is the time for you to taste it, which means: what else do you prefer to add in this mix? But that's the idea: to season it to your taste. But generally, as I said, the ingredients are very simple. Four ingredients: onions, chicken breast, chicken hearts and chicken livers. And all this is called the Jerusalem Mix. In a moment, we'll show how to serve it. And now for the plating, as you can see, it's very simple. The mix is on the plate. You add any vegetables you like. Fresh vegetables- very nice idea. It can be very fine. chopped Israeli salad and pita. It's always better with the pita bread. And if you already like the Israeli taste, tahini sauce is always a good adding for such a Joerusalem Mix.
